FREEZER TIPS Part 3 Stewing Fruit, plus a Plum & Apple Crumble Recipe

In Part 1 we shared our freezer tips for vegetables and bread, in Part 2 it was all about fruit, sweets and treats, and this week we're stewing fruit.

STEWED FRUIT is so special to us because it's something our grandparents and parents would for us growing up. It's so quick to make and ideal for freezing in portions.

The BASIC STEWED FRUIT RECIPE:
Washing, peeling if necessary and chopping the fruit
Adding to a sauce pan over medium heat with a splash of water, and a squeeze of lemon
Bringing to a simmer and cooking until it is the softness you would like - you can choose to stew lightly and retain the shape of the fruit, or cook it for longer to break it down into a more jammy texture
OPTIONAL taste the fruit and if you would like a little more sweetness, add some maple syrup, honey, coconut sugar or other sweetener
Cool the stewed fruit
Spoon portions into containers and store in the freezer, or the fridge for a day or two

So many fruits are suited to stewing and here are a few of our favourites.
APPLES or PEARS work well peeled, or left as they are, beautifully organic, with the skin on to increase fibre and nutrition. We always add cinnamon and sometimes with blend to make a smooth apple sauce.
STONE FRUITS including peaches, apricots, plums and nectarines cook quite quickly. If they are a free stone variety, they can be prepped easily but cutting in half or quarters.
BERRIES cook even more quickly than stone fruit and turn into a gorgeous coulis with it's own brightly coloured sauce.
PINEAPPLE stews beautifully, especially if it's a little over ripe, but we also like it sauted in ghee or coconut oil with coconut sugar.
BANANA is not as suited to stewing but similar to pineapple, is absolutely delicious sauted in a frypan over medium low heat with ghee or coconut oil and coconut sugar.
PUMPKIN is technically a fruit and we love having simply stewed pumpkin with cinnamon waiting in the fridge to make yoghurt bowls. It takes a while to cook in the saucepan or steam with an inch or two of water, and ready when it's tender and mashable.
TOMATO and ZUCCHINI are gorgeous, stewed into a chunky sauce with sauted onion, garlic and basil. We love having this saved in the freezer for easy pasta dinners.

Stewed fruit with porridge, cereal or yoghurt and nut butter is a simple breakfast that tastes like a treat. We also love layering our fruit in overnight oats with milk, protein powder and some nuts and seeds.
Savoury dishes like the classic Apricot Chicken or English Style Curry with apples become easy weeknight dinner options with the stewed fruit ready to defrost.
But our favourite way to use our stewed fruit has to be in a crumble for dessert.
We've outlined an allergy friendly, grain free and gluten free option using almond flour but a traditional crumble with flour, or oats is gorgeous too. If we could bake one for each of you to express our gratitude for being our customers and Raw Food Hub family we would!

For 4 serves
1.5 cups of stewed fruit
1 cup of almond flour
3 tbsp of butter or coconut oil
2 tbsp of your preferred sugar plus another spoon to sprinkle on top
Sprinkle of cinnamon
Place stewed fruit in an oven proof dish and preheat oven to 180C.
Place remaining ingredients in a mixing bowl and rub the butter into the flour with your finger tips. Pour crumble evenly on top of the fruit, sprinkle with extra sugar and place in the oven.
Bake for 15 minutes or until the top is golden and serve with cream, ice cream, yoghurt or coconut cream. It's wonderful the next day for breakfast.
